Sweet Raspberry Macarons

1 cup almond flour
2 cups powdered sugar
3 large egg whites, room temperature
1/4 cup granulated sugar
1/2 teaspoon raspberry extract
Pink food coloring
1/2 cup raspberry jam

Preheat your oven to 300°F (150°C) and line baking sheets with parchment paper.
In a food processor, blend almond flour and powdered sugar until finely mixed. Sift the Mixture into a large Bowl.
In a Separate bowl, beat egg Whites until foamy. Gradually add granulated sugar, raspberry extract, and pink food coloring. Continue beating until stiff peaks form.
Gently fold the almond flour mixture into the egg whites until just combined, being careful not to deflate the mixture.
Transfer The batter into a piping bag fitted With a round Tip. Pipe small circles onto the prepared baking sheets.
Tap the Baking sheets against the counter to release any air bubbles. Let the macarons sit at room temperature for 30 minutes until a skin forms.
Bake for 15-18 minutes until the tops are set and the bottoms are firm. Let them Cool completely on The baking Sheets.
Once cooled, spread raspberry jam onto the flat side of half the macarons, then sandwich them together with the remaining halves.
